

Qualities of our high polyphenol EVOO
The qualities of our oil include more than 1371 milligrams of polyphenols per kilogram of oil, which is at least five to ten times more than average olive oil. We test each batch in an EU approved laboratory to ensure consistent quality.
High polyphenol olive oils are special due to their high levels of polyphenols, which are natural antioxidants. These polyphenols provide several health benefits, such as reducing inflammation, improving heart health, and lowering the risk of certain diseases. They also contribute to the flavor and taste of the olive oil, giving it a distinctive, robust taste that sets it apart from other types of olive oil. Additionally, high polyphenol olive oils have a longer shelf life, meaning they can be stored for a longer period of time without losing their quality and taste.
These summer oils are always green, as they contain a high amount of chlorophyll, which is also therapeutic.
The European Union (EU) allows the use of three health claims related to olive oil that are scientifically supported and authorized. These claims include the following:
- Olive oil helps maintain normal blood cholesterol levels.
- Olive oil contributes to the protection of blood lipids from oxidative stress.
- Olive oil helps maintain normal blood pressure levels.
These claims are authorized under EU Regulation 432/2012 on nutrition and health claims made on foods. However, it is important to note that these claims do not imply a direct causal relationship between the consumption of olive oil and improved health outcomes. They are simply statements based on current scientific evidence that may contribute to better health outcomes when consumed as part of a balanced and healthy diet.

Our trees
The care for the trees starts when you plant the first tree. The selection of the plantation location and spacing between the trees is important for later cultivation and yield. This is especially true for us, as we care for our olive groves in an organic manner.

Our harvest
We pick the olives late in the summer, towards the end of August or the beginning of September. Hence, the oil obtained at this time is also called summer oil. It has been proven that the olives contain the highest amount of beneficial polyphenols for our health at this time.

Our olives
Our olives are mainly Istrian belica variety. In the future, we will supplement them with traditional varieties from Istria, as well as others that are suitable for our local environment and follow new climatic conditions.

Our pressing process
The pressing process is an important part in ensuring the quality of our oil. It requires a lot of specific knowledge and experience, as well as the flexibility of the pressing machine. This involves several parameters such as proper temperatures during processing, blade selection, blade speeds, etc.
