This Saturday marked an important moment for Terra Centuria: the beginning of our 2026 olive harvest and the first pressing of the season.
Our olives are harvested at a very early stage of ripeness, while the fruit is still green. At this point, the yield is lower than it would be later in the season, but the olives contain higher levels of valuable polyphenols. These natural antioxidants contribute to the oil’s distinctive character, intense aroma and robust flavour.
Once harvested, the olives are pressed without delay. Careful handling and precisely controlled processing help us preserve their freshness and naturally occurring beneficial compounds. The result is a vivid green extra virgin olive oil that reflects both the character of Slovenian Istria and our commitment to quality.
The beginning of the early harvest has also attracted the attention of Slovenian national media. RTV Slovenija reported on why selected olive growers are choosing to harvest earlier and how this approach influences the properties and quality of the finished oil.
For us, every new harvest is the result of a full year of caring for our olive trees, monitoring the fruit and waiting for the right moment to begin. Seeing the first oil emerge from the press is always a special occasion, and the first taste is the purest expression of the new season.
